Parsley Butter Omelet

Ingredients

  • 2 or 3 eggs
  • 2 tsp finely chopped parsley
  • 1 oz butter
  • Salt and pepper to taste

Method

  1. 1 Break eggs into a basin and add parsley, pepper, and salt.
  2. 2 Melt butter in a small omelet pan over high heat.
  3. 3 Beat eggs lightly and pour into the hot pan.
  4. 4 Shake and stir vigorously until the mixture begins to set.
  5. 5 Tilt the pan and draw the egg to one side, letting the other side set for 2-3 seconds.
  6. 6 Fold the omelet over and slide onto a hot dish to serve immediately.
