Parsley Butter Omelet
Ingredients
- 2 or 3 eggs
- 2 tsp finely chopped parsley
- 1 oz butter
- Salt and pepper to taste
Method
- 1 Break eggs into a basin and add parsley, pepper, and salt.
- 2 Melt butter in a small omelet pan over high heat.
- 3 Beat eggs lightly and pour into the hot pan.
- 4 Shake and stir vigorously until the mixture begins to set.
- 5 Tilt the pan and draw the egg to one side, letting the other side set for 2-3 seconds.
- 6 Fold the omelet over and slide onto a hot dish to serve immediately.
