Parsley And Green Onion Sauce

Ingredients

  • 1 handful parsley leaves
  • 1/2 tsp salt
  • 6 young green onions
  • 3 tbsp oil
  • 5 tbsp vinegar
  • ground black pepper
  • salt
  • pickled French beans or gherkins, cut fine (optional)
  • grated horseradish (optional)

Method

  1. 1 Mince parsley leaves very fine and strew over a little salt.
  2. 2 Shred fine half a dozen young green onions and add to the parsley.
  3. 3 Place herbs in a sauceboat with oil and vinegar.
  4. 4 Add ground black pepper and salt, stir together, and serve.
