Parmesan Tomato Rice
Ingredients
- rice
- tomatoes
- pepper
- salt
- mustard
- Parmesan cheese
Method
- 1 Boil the rice until tender, then drain and keep it hot.
- 2 Stew tomatoes gently, rub through a sieve to make a puree, and return to heat with pepper, salt, and a small amount of mustard.
- 3 Place the hot rice on a dish and pour the tomato puree over it.
- 4 Sprinkle grated Parmesan cheese thickly over the top.
