Parmesan Potato Tartlets

Ingredients

  • 4 medium boiled potatoes, shredded
  • Salt and pepper to taste
  • Butter, for greasing
  • Grated Parmesan cheese

Method

  1. 1 Shred the boiled potatoes and season with salt and pepper.
  2. 2 Lightly butter six tartlet molds. Cover the bottoms with grated Parmesan cheese.
  3. 3 Layer the potatoes and cheese in the molds, finishing with a sprinkle of cheese and a dot of butter on top.
  4. 4 Bake in a very hot oven (425°F) for 15 to 30 minutes until heated through and golden.
  5. 5 Serve immediately on a hot dish, still in the molds.
