Parmesan Potato Tartlets
Ingredients
- 4 medium boiled potatoes, shredded
- Salt and pepper to taste
- Butter, for greasing
- Grated Parmesan cheese
Method
- 1 Shred the boiled potatoes and season with salt and pepper.
- 2 Lightly butter six tartlet molds. Cover the bottoms with grated Parmesan cheese.
- 3 Layer the potatoes and cheese in the molds, finishing with a sprinkle of cheese and a dot of butter on top.
- 4 Bake in a very hot oven (425°F) for 15 to 30 minutes until heated through and golden.
- 5 Serve immediately on a hot dish, still in the molds.
