Parmesan Gougères

Ingredients

  • ¼ cup water
  • 2 oz butter
  • 2 oz all-purpose flour
  • 2 oz grated Parmesan cheese
  • Salt to taste
  • Cayenne pepper to taste
  • 2 large eggs, well-beaten
  • Oil for frying

Method

  1. 1 Boil water and butter in a saucepan. Remove from heat and stir in flour until the mixture forms a ball and pulls away from the sides.
  2. 2 Return to low heat and cook the dough for 1 minute, stirring constantly. Remove from heat and stir in Parmesan cheese, salt, and cayenne.
  3. 3 Mix in the beaten eggs one at a time until fully incorporated and smooth.
  4. 4 Heat oil in a deep pan until hot. Drop spoonfuls of the mixture into the oil and fry until golden brown.
  5. 5 Remove fritters and drain on paper towels. Serve immediately.
