Parmesan Gougères
Ingredients
- ¼ cup water
- 2 oz butter
- 2 oz all-purpose flour
- 2 oz grated Parmesan cheese
- Salt to taste
- Cayenne pepper to taste
- 2 large eggs, well-beaten
- Oil for frying
Method
- 1 Boil water and butter in a saucepan. Remove from heat and stir in flour until the mixture forms a ball and pulls away from the sides.
- 2 Return to low heat and cook the dough for 1 minute, stirring constantly. Remove from heat and stir in Parmesan cheese, salt, and cayenne.
- 3 Mix in the beaten eggs one at a time until fully incorporated and smooth.
- 4 Heat oil in a deep pan until hot. Drop spoonfuls of the mixture into the oil and fry until golden brown.
- 5 Remove fritters and drain on paper towels. Serve immediately.
