Parmesan Cheese Souffle

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup hot milk
  • ½ teaspoon salt
  • dash cayenne pepper
  • 1 cup grated Parmesan cheese
  • 3 egg yolks
  • 3 egg whites

Method

  1. 1 Melt butter in a saucepan. Add flour, hot milk, salt, and cayenne pepper, stirring constantly until thickened.
  2. 2 Remove from heat and stir in Parmesan cheese and beaten egg yolks. Let the mixture cool slightly.
  3. 3 Fold in stiffly beaten egg whites until fully incorporated.
  4. 4 Pour into a pudding dish and bake for 25 minutes. Serve immediately.
