Parmesan Cheese Soufflé

Ingredients

  • 8 oz Parmesan or other good dry cooking cheese
  • 4 eggs
  • 1 oz Allinson fine wheatmeal
  • ½ cup milk
  • 1 oz butter
  • mustard, pepper, and salt to taste

Method

  1. 1 Melt butter in a saucepan. Stir in wheatmeal and season with mustard, pepper, and salt.
  2. 2 Pour in milk and stir until the mixture thickens and pulls away from the sides of the pan.
  3. 3 Turn mixture into a basin to cool. Grate cheese and stir it in.
  4. 4 Separate eggs. Beat yolks one by one into the cheese mixture until well combined.
  5. 5 Whip egg whites to stiff peaks. Lightly fold whites into the cheese mixture.
  6. 6 Pour into a buttered soufflé tin and bake for 15 minutes.
