Parmesan Cheese Soufflé
Ingredients
- 8 oz Parmesan or other good dry cooking cheese
- 4 eggs
- 1 oz Allinson fine wheatmeal
- ½ cup milk
- 1 oz butter
- mustard, pepper, and salt to taste
Method
- 1 Melt butter in a saucepan. Stir in wheatmeal and season with mustard, pepper, and salt.
- 2 Pour in milk and stir until the mixture thickens and pulls away from the sides of the pan.
- 3 Turn mixture into a basin to cool. Grate cheese and stir it in.
- 4 Separate eggs. Beat yolks one by one into the cheese mixture until well combined.
- 5 Whip egg whites to stiff peaks. Lightly fold whites into the cheese mixture.
- 6 Pour into a buttered soufflé tin and bake for 15 minutes.
