Parmesan Bread Dumplings In Stock
Ingredients
- 3.5 oz butter
- 2 eggs
- 4 oz bread crumbs soaked in stock
- 1 tbsp chopped parsley
- Salt to taste
- Pinch of nutmeg
- 2 tbsp flour
- 1 tbsp grated Parmesan cheese
- Stock for boiling and serving
Method
- 1 Mix butter, eggs, soaked bread crumbs, parsley, salt, and nutmeg in a bowl.
- 2 Stir in flour and grated Parmesan until combined.
- 3 Form mixture into small quenelles (oval shapes).
- 4 Boil quenelles in stock for a few minutes until cooked through.
- 5 Place quenelles in a tureen and pour hot clear stock over them to serve.
