Parmesan Bread Dumplings In Stock

Ingredients

  • 3.5 oz butter
  • 2 eggs
  • 4 oz bread crumbs soaked in stock
  • 1 tbsp chopped parsley
  • Salt to taste
  • Pinch of nutmeg
  • 2 tbsp flour
  • 1 tbsp grated Parmesan cheese
  • Stock for boiling and serving

Method

  1. 1 Mix butter, eggs, soaked bread crumbs, parsley, salt, and nutmeg in a bowl.
  2. 2 Stir in flour and grated Parmesan until combined.
  3. 3 Form mixture into small quenelles (oval shapes).
  4. 4 Boil quenelles in stock for a few minutes until cooked through.
  5. 5 Place quenelles in a tureen and pour hot clear stock over them to serve.
