Parker House Cornmeal Rolls

Ingredients

  • 1 1/4 cups white flour
  • 3/4 cup cornmeal
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons butter
  • 1 egg
  • 1/2 cup milk

Method

  1. 1 Mix and sift dry ingredients (flour, cornmeal, baking powder, salt, sugar) in a bowl. Chop butter into the mixture with a knife.
  2. 2 Beat the egg, add the milk, and slowly pour into the dry ingredients to form a soft dough. Add more milk if necessary.
  3. 3 Toss dough lightly on a floured board and pat to 1/2-inch thickness. Cut with a round cutter.
  4. 4 Place a small piece of butter in the center of each roll. Fold the dough in half so opposite edges meet.
  5. 5 Place rolls on a buttered baking sheet. Wet the tops with milk and bake in a hot oven (425°F) for 10-15 minutes.
