Parker House Cornmeal Rolls
Ingredients
- 1 1/4 cups white flour
- 3/4 cup cornmeal
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons butter
- 1 egg
- 1/2 cup milk
Method
- 1 Mix and sift dry ingredients (flour, cornmeal, baking powder, salt, sugar) in a bowl. Chop butter into the mixture with a knife.
- 2 Beat the egg, add the milk, and slowly pour into the dry ingredients to form a soft dough. Add more milk if necessary.
- 3 Toss dough lightly on a floured board and pat to 1/2-inch thickness. Cut with a round cutter.
- 4 Place a small piece of butter in the center of each roll. Fold the dough in half so opposite edges meet.
- 5 Place rolls on a buttered baking sheet. Wet the tops with milk and bake in a hot oven (425°F) for 10-15 minutes.
