Paprika Parsley Oyster Fritters
Ingredients
- 25 small oysters, chopped fine
- 1 ¼ cups liquid from oysters plus milk
- 2 cups flour
- 2 teaspoons baking powder
- 1 ½ teaspoons salt
- 1 teaspoon paprika
- 3 tablespoons finely minced parsley
- 1 tablespoon grated onion
- 1 well-beaten egg
- Oil for frying
Method
- 1 Chop oysters fine and measure their liquid. Add enough milk to make 1 ¼ cups total liquid.
- 2 In a bowl, combine the oyster mixture with flour, baking powder, salt, paprika, parsley, onion, and egg.
- 3 Beat the mixture until smooth.
- 4 Fry spoonfuls in hot fat until golden brown.
