Paprika Parsley Oyster Fritters

Ingredients

  • 25 small oysters, chopped fine
  • 1 ¼ cups liquid from oysters plus milk
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 ½ teaspoons salt
  • 1 teaspoon paprika
  • 3 tablespoons finely minced parsley
  • 1 tablespoon grated onion
  • 1 well-beaten egg
  • Oil for frying

Method

  1. 1 Chop oysters fine and measure their liquid. Add enough milk to make 1 ¼ cups total liquid.
  2. 2 In a bowl, combine the oyster mixture with flour, baking powder, salt, paprika, parsley, onion, and egg.
  3. 3 Beat the mixture until smooth.
  4. 4 Fry spoonfuls in hot fat until golden brown.
