Paprika Mustard Mayonnaise
Ingredients
- 2 egg yolks
- 1 pinch salt
- 1 pinch paprika
- ½ tsp dry mustard
- 1 cup vegetable oil
- ½ lemon, juiced
Method
- 1 Place an earthen bowl in a larger bowl filled with cracked ice.
- 2 Add egg yolks, salt, paprika, and dry mustard to the inner bowl.
- 3 Mix thoroughly, then add oil drop by drop while beating constantly.
- 4 Continue adding oil until the mixture is stiff enough to cut with a knife.
- 5 Stir in lemon juice to taste, cover, and keep on ice until serving.
