Paprika Mustard Mayonnaise

Ingredients

  • 2 egg yolks
  • 1 pinch salt
  • 1 pinch paprika
  • ½ tsp dry mustard
  • 1 cup vegetable oil
  • ½ lemon, juiced

Method

  1. 1 Place an earthen bowl in a larger bowl filled with cracked ice.
  2. 2 Add egg yolks, salt, paprika, and dry mustard to the inner bowl.
  3. 3 Mix thoroughly, then add oil drop by drop while beating constantly.
  4. 4 Continue adding oil until the mixture is stiff enough to cut with a knife.
  5. 5 Stir in lemon juice to taste, cover, and keep on ice until serving.
