Pan Seared Veal With Bacon And Citrus Sauce

Ingredients

  • 1 lb veal leg, sliced thin
  • 4 oz bacon, sliced thin
  • 2 tbsp butter
  • 2 tbsp butter, beaten
  • 1 tbsp lemon juice
  • 2 tbsp gravy
  • 1 tbsp orange juice

Method

  1. 1 Slice the veal leg into thin pieces similar to Scotch collops of mutton.
  2. 2 Fry the veal slices and thin bacon slices together in sweet butter until finely fried.
  3. 3 Transfer the meat to a serving dish and remove the frying butter.
  4. 4 Stir beaten butter, lemon juice, gravy, and orange juice into the pan drippings.
  5. 5 Pour the sauce over the meat and serve immediately.
