Pan Seared Steaks With Oyster Sauce
Ingredients
- 2 fine rump steaks
- Salt and pepper to taste
- Few cloves
- Piece of mace
- 1 onion
- 1 anchovy
- Bundle of sweet herbs
- ½ cup white wine
- 1 tbsp butter mixed with flour
- Fresh butter for frying
- 12 oysters, blanched
- 1 tbsp oyster liquor
- Horseradish for garnish
Method
- 1 Season steaks with salt and pepper. Place in a stewpan with cloves, mace, onion, anchovy, sweet herbs, wine, and flour-butter mixture.
- 2 Cover tightly and stew gently until tender, shaking pan occasionally to prevent sticking.
- 3 Remove steaks. Fry them in fresh butter until browned and place in a serving dish.
- 4 Strain cooking gravy, removing fat. Add to the strained gravy the blanched oysters and oyster liquor.
- 5 Bring sauce to a boil, pour over steaks, and garnish with horseradish.
