Pan-Seared Sole With Tomato Puree
Ingredients
- 1 sole, filleted
- 1 ½ oz butter
- 1 clove garlic
- 1 tbsp chopped fennel
- Salt and pepper to taste
- Tomato puree
Method
- 1 Place sole fillets in a sauté pan with butter and a halved garlic clove.
- 2 Sprinkle with chopped fennel, salt, and pepper. Cook for a few minutes.
- 3 Flip fillets when one side is cooked. Remove garlic.
- 4 Cover fish with tomato puree and serve immediately.
