Pan-Seared Sole With Tomato Puree

Ingredients

  • 1 sole, filleted
  • 1 ½ oz butter
  • 1 clove garlic
  • 1 tbsp chopped fennel
  • Salt and pepper to taste
  • Tomato puree

Method

  1. 1 Place sole fillets in a sauté pan with butter and a halved garlic clove.
  2. 2 Sprinkle with chopped fennel, salt, and pepper. Cook for a few minutes.
  3. 3 Flip fillets when one side is cooked. Remove garlic.
  4. 4 Cover fish with tomato puree and serve immediately.
