Pan Seared Hamburg Steak With Brown Sauce
Ingredients
- 1 lb lean raw meat, finely chopped
- 1/2 tbsp onion juice
- 1/2 tsp salt
- 1/4 tsp pepper
- Dash of nutmeg
- 1 egg
- Flour for dredging
- Butter for sautéing
- Maître d'hôtel butter (optional)
- 1 tbsp flour (for sauce)
- Soup stock (for sauce)
- Lemon juice or Worcestershire sauce (for sauce)
- Watercress for garnish
Method
- 1 Chop meat very fine, removing all fiber. Mix with onion juice, salt, pepper, nutmeg, and egg.
- 2 Form mixture into small balls, flatten into patties, and dredge with flour.
- 3 Sauté patties in butter until browned. Place on a hot dish.
- 4 For sauce, brown 1 tbsp flour in the pan butter, then slowly add soup stock. Season with salt, pepper, and lemon juice or Worcestershire sauce.
- 5 Drop a teaspoon of sauce on each steak. Garnish with watercress and serve hot.
