Pan Sauce For Fish
Ingredients
- 1 cup fish cooking liquid
- 2 tablespoons cornstarch
- 3 tablespoons water
- 1 tablespoon butter
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon paprika
- juice of ½ lemon
Method
- 1 Strain the liquid remaining in the pan after removing the fish. Add enough boiling water to measure exactly 1 cup.
- 2 Dissolve the cornstarch in 3 tablespoons of cold water in a small bowl.
- 3 Pour the fish liquid into a saucepan over medium heat. Whisk in the cornstarch mixture, butter, Worcestershire sauce, salt, paprika, and lemon juice.
- 4 Bring to a boil while stirring constantly. Cook for 5 minutes until thickened, then serve immediately over the fish.
