Pan Sauce For Fish

Ingredients

  • 1 cup fish cooking liquid
  • 2 tablespoons cornstarch
  • 3 tablespoons water
  • 1 tablespoon butter
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • juice of ½ lemon

Method

  1. 1 Strain the liquid remaining in the pan after removing the fish. Add enough boiling water to measure exactly 1 cup.
  2. 2 Dissolve the cornstarch in 3 tablespoons of cold water in a small bowl.
  3. 3 Pour the fish liquid into a saucepan over medium heat. Whisk in the cornstarch mixture, butter, Worcestershire sauce, salt, paprika, and lemon juice.
  4. 4 Bring to a boil while stirring constantly. Cook for 5 minutes until thickened, then serve immediately over the fish.
