Pan Roasted Rolled Veal Loin

Ingredients

  • 1 piece milk veal loin
  • Olive oil
  • Butter
  • Salt
  • ½ cup broth
  • Tomato sauce or diluted tomato paste (optional)
  • Chopped corned beef (optional)

Method

  1. 1 Roll the veal loin and tie it securely with kitchen string.
  2. 2 Heat olive oil and butter in a pan. Brown the veal well on all sides.
  3. 3 Salt the meat when it is half cooked.
  4. 4 Add broth (or tomato sauce/paste diluted with water) and cook until done, ensuring little juice remains.
