Pan Fried Sole With Anchovy And Capers
Ingredients
- 1 sole or mullet fillet
- 1 oz butter
- 1 anchovy
- 1 clove garlic, halved
- 1 egg yolk
- 3 capers
- Fresh parsley, chopped
- Salt and pepper to taste
Method
- 1 Melt butter in a saucepan with the anchovy. Add the fish and fry lightly for a few minutes.
- 2 Season with pepper, sprinkle chopped parsley, and add the halved garlic clove. Cook for 30 minutes, turning the fish when one side is done.
- 3 Remove the garlic after 5 minutes. Stir in the egg yolk and capers just before serving.
