Pan Fried Sole With Anchovy And Capers

Ingredients

  • 1 sole or mullet fillet
  • 1 oz butter
  • 1 anchovy
  • 1 clove garlic, halved
  • 1 egg yolk
  • 3 capers
  • Fresh parsley, chopped
  • Salt and pepper to taste

Method

  1. 1 Melt butter in a saucepan with the anchovy. Add the fish and fry lightly for a few minutes.
  2. 2 Season with pepper, sprinkle chopped parsley, and add the halved garlic clove. Cook for 30 minutes, turning the fish when one side is done.
  3. 3 Remove the garlic after 5 minutes. Stir in the egg yolk and capers just before serving.
