Method
- 1 Clean and dry the scallops thoroughly, then lightly dust with flour.
- 2 Fry the scallops in a pan until they turn a fine light brown.
- 3 Prepare a strong, light sauce using veal stock and a little ham.
- 4 Thicken the sauce slightly, then gently stew the scallops in it for half an hour.
