Pan Fried Salmon Patties With Lemon
Ingredients
- 1 can (16 oz) salmon, drained
- 1 tablespoon lemon juice
- cold water as needed
- 1/4 cup minced celery (optional)
- 1 tablespoon minced green pepper (optional)
- 1/2 medium onion, minced
- 2 large eggs
- 1/3 cup bread crumbs or cracker crumbs
- 2 tablespoons all-purpose flour
- 1/8 teaspoon black pepper
- 1 tablespoon vegetable oil
Method
- 1 Drain the salmon, reserving the liquid. Add lemon juice and cold water to the liquid to make 1/2 cup total.
- 2 In a bowl, combine salmon, celery, green pepper, and onion.
- 3 Beat eggs and add to the salmon mixture along with bread crumbs, flour, pepper, and reserved liquid. Stir until combined.
- 4 Form mixture into six 1/2-inch thick patties.
- 5 Heat oil in a skillet over medium heat. Cook patties 2-3 minutes per side until golden brown. Serve immediately.
