Pan Fried Salmon Patties With Lemon

Ingredients

  • 1 can (16 oz) salmon, drained
  • 1 tablespoon lemon juice
  • cold water as needed
  • 1/4 cup minced celery (optional)
  • 1 tablespoon minced green pepper (optional)
  • 1/2 medium onion, minced
  • 2 large eggs
  • 1/3 cup bread crumbs or cracker crumbs
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon black pepper
  • 1 tablespoon vegetable oil

Method

  1. 1 Drain the salmon, reserving the liquid. Add lemon juice and cold water to the liquid to make 1/2 cup total.
  2. 2 In a bowl, combine salmon, celery, green pepper, and onion.
  3. 3 Beat eggs and add to the salmon mixture along with bread crumbs, flour, pepper, and reserved liquid. Stir until combined.
  4. 4 Form mixture into six 1/2-inch thick patties.
  5. 5 Heat oil in a skillet over medium heat. Cook patties 2-3 minutes per side until golden brown. Serve immediately.
