Pan Fried Sage And Thyme Pork Sausages
Ingredients
- equal parts pork fat and lean meat (from spare ribs)
- sage leaves
- thyme
- black pepper
- salt
- 1-2 eggs
- flour (for dusting)
Method
- 1 Chop equal parts pork fat and lean meat together finely.
- 2 Mix in chopped sage, thyme, pepper, salt, and eggs until thoroughly combined.
- 3 Dust a surface with flour and roll the mixture into sausage shapes the size of a thumb.
- 4 Fry the sausages in a pan over medium heat until cooked through.
