Pan Fried Potatoes With Onions

Ingredients

  • cold boiled potatoes, diced
  • 2 tablespoons butter
  • 1 onion, sliced
  • 1 teaspoon finely chopped parsley

Method

  1. 1 Dice cold boiled potatoes into uniform small pieces.
  2. 2 Melt butter in a frying pan and fry sliced onions for 3 minutes. Remove onions with a skimmer.
  3. 3 Add potatoes to the hot butter. Toss gently to heat without browning.
  4. 4 Stir in chopped parsley and cook for 1 minute. Drain excess fat and serve hot.
