Pan Fried Potato Patties
Ingredients
- 1 quart potatoes
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon chopped parsley
- 1 teaspoon onion juice
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup hot water
Method
- 1 Boil potatoes until tender, then drain and let them cool completely. Do not chop while hot.
- 2 Chop the cold potatoes. Toss with salt, pepper, parsley, and onion juice.
- 3 Melt butter in a saucepan. Stir in flour to make a roux, then gradually whisk in hot water. Season with salt and pepper.
- 4 Add the potatoes to the sauce and cook for 5 minutes, stirring until the liquid is absorbed.
- 5 Butter a sauté pan. Add the potato mixture and cook until light brown on one side, then flip like an omelet to brown the other side.
