Pan Fried Potato Patties

Ingredients

  • 1 quart potatoes
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon chopped parsley
  • 1 teaspoon onion juice
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup hot water

Method

  1. 1 Boil potatoes until tender, then drain and let them cool completely. Do not chop while hot.
  2. 2 Chop the cold potatoes. Toss with salt, pepper, parsley, and onion juice.
  3. 3 Melt butter in a saucepan. Stir in flour to make a roux, then gradually whisk in hot water. Season with salt and pepper.
  4. 4 Add the potatoes to the sauce and cook for 5 minutes, stirring until the liquid is absorbed.
  5. 5 Butter a sauté pan. Add the potato mixture and cook until light brown on one side, then flip like an omelet to brown the other side.
