Pan Fried Potato And Pepper Hash

Ingredients

  • 5 potatoes, boiled in jackets and sliced thin
  • 3/4 cup onions, minced fine
  • 2 green peppers, chopped fine
  • 3 tablespoons shortening
  • finely chopped parsley, for garnish

Method

  1. 1 Parboil the minced onions and chopped green peppers until tender, then drain well.
  2. 2 Heat shortening in a frying pan until very hot. Add sliced potatoes and brown on one side.
  3. 3 Fold over and brown the other side. Keep turning until potatoes are well browned.
  4. 4 Add the prepared onions and peppers. Cook slowly for five minutes.
  5. 5 Transfer to a hot platter and garnish with finely chopped parsley.
