Pan Fried Potato And Pepper Hash
Ingredients
- 5 potatoes, boiled in jackets and sliced thin
- 3/4 cup onions, minced fine
- 2 green peppers, chopped fine
- 3 tablespoons shortening
- finely chopped parsley, for garnish
Method
- 1 Parboil the minced onions and chopped green peppers until tender, then drain well.
- 2 Heat shortening in a frying pan until very hot. Add sliced potatoes and brown on one side.
- 3 Fold over and brown the other side. Keep turning until potatoes are well browned.
- 4 Add the prepared onions and peppers. Cook slowly for five minutes.
- 5 Transfer to a hot platter and garnish with finely chopped parsley.
