Ingredients

  • 6 medium cold boiled potatoes
  • 3 raw green peppers
  • ¼ teaspoon celery salt
  • salt and pepper to taste
  • 1 tablespoon melted shortening

Method

  1. 1 Chop potatoes fine and season with celery salt, salt, and pepper.
  2. 2 Remove seeds and stem from peppers, wash, drain, and chop fine.
  3. 3 Mix chopped peppers with potatoes.
  4. 4 Heat shortening in a pan and add potato mixture, cooking slowly.
  5. 5 When partly brown, fold into an omelet shape and fry until rich brown.
