Pan Fried Parsnip Cakes
Ingredients
- parsnips
- salt and pepper
- melted butter
- flour
- 1 egg
Method
- 1 Boil parsnips for one hour until tender, then plunge into cold water and peel.
- 2 Slice parsnips lengthwise into ¼-inch thick slices.
- 3 Season with salt and pepper, dip in melted butter, roll in flour, and sauté until browned.
- 4 Alternatively, mash boiled parsnips, mix in 1 tbsp flour and 1 egg, form into cakes, and fry in drippings until browned.
