Pan Fried Parsnip Cakes

Ingredients

  • parsnips
  • salt and pepper
  • melted butter
  • flour
  • 1 egg

Method

  1. 1 Boil parsnips for one hour until tender, then plunge into cold water and peel.
  2. 2 Slice parsnips lengthwise into ¼-inch thick slices.
  3. 3 Season with salt and pepper, dip in melted butter, roll in flour, and sauté until browned.
  4. 4 Alternatively, mash boiled parsnips, mix in 1 tbsp flour and 1 egg, form into cakes, and fry in drippings until browned.
