Pan Fried Mashed Potato Cakes With Cream Gravy

  • 1/2 cup salt pork, minced
  • 3/4 cup green onions, chopped
  • 1 quart mashed potatoes, well seasoned
  • Flour, for rolling
  • Pork fat, for frying
  • Cream gravy, well seasoned

Method

  1. 1 Mince salt pork and place in a frying pan. Add chopped green onions and cook slowly until tender.
  2. 2 Add the well-seasoned mashed potatoes to the pan and mix well. Turn the mixture into a bowl and allow it to cool.
  3. 3 Form the cooled potato mixture into cakes. Roll each cake in flour to coat.
  4. 4 Brown the potato cakes in hot pork fat. Serve immediately with well-seasoned cream gravy.
