Pan Fried Mashed Potato Cakes With Cream Gravy
Ingredients
- 1/2 cup salt pork, minced
- 3/4 cup green onions, chopped
- 1 quart mashed potatoes, well seasoned
- Flour, for rolling
- Pork fat, for frying
- Cream gravy, well seasoned
Method
- 1 Mince salt pork and place in a frying pan. Add chopped green onions and cook slowly until tender.
- 2 Add the well-seasoned mashed potatoes to the pan and mix well. Turn the mixture into a bowl and allow it to cool.
- 3 Form the cooled potato mixture into cakes. Roll each cake in flour to coat.
- 4 Brown the potato cakes in hot pork fat. Serve immediately with well-seasoned cream gravy.
