Pan Fried Leftover Meat Cakes

Ingredients

• cold meat, game, or poultry
• fat bacon or ham
• anchovy
• pepper
• salt

Method

1. 1 Mince the cold meat, game, or poultry fine, adding a little fat bacon, ham, or anchovy.
2. 2 Season with pepper and salt, then mix well.
3. 3 Form the mixture into small cakes, approximately three inches long, half as wide, and half an inch thick.
4. 4 Fry the cakes in a pan until light brown, then serve with good gravy.
