  • Herrings, cleaned
  • Salt
  • Pepper
  • Flour
  • Frying fat

Method

  1. 1 Lightly sprinkle herrings with salt and pepper 2-3 hours before cooking.
  2. 2 Wipe herrings dry and coat them in flour.
  3. 3 Heat frying fat in a pan until it covers the fish.
  4. 4 Fry herrings quickly at first, then moderate heat, for 10-12 minutes until crisp and brown.
  5. 5 Drain on a dish to remove excess fat before serving.
