Pan Fried Cream Potatoes
Ingredients
- potatoes
- flour
- butter
- salt
- cream
Method
- 1 Bake potatoes in a slow oven (300°F) until cooked, then let them cool completely.
- 2 Slice the cold potatoes thinly. Place in a pan, sprinkle with a little flour, and toss by hand until each piece is lightly coated.
- 3 Top with small bits of butter, a little salt, and enough cream to cover the potatoes halfway.
- 4 Cook over heat, stirring gently with a knife blade to lift from the bottom without turning over, until the cream reduces and potatoes glisten.
- 5 Transfer to a hot serving dish immediately to keep warm without further cooking.
