Pan Fried Cornmeal Cakes
Ingredients
- 1 cup cornmeal
- 1 cup milk
- 1 tablespoon melted butter
- ½ teaspoon salt
- 1 teaspoon baking powder (if using sweet milk)
- ½ teaspoon baking soda (if using sour milk)
- Fat for frying
Method
- 1 Mix cornmeal, milk, melted butter, and salt to form a thin batter.
- 2 If using sweet milk, stir in baking powder; if using sour milk, add baking soda.
- 3 Heat fat in a frying pan over medium heat.
- 4 Pour batter into the pan to a thickness of about ½ inch.
- 5 Cook until browned on one side, then flip and cook the other side.
- 6 Serve hot.
