Pan Fried Cornmeal Cakes

  • 1 cup cornmeal
  • 1 cup milk
  • 1 tablespoon melted butter
  • ½ teaspoon salt
  • 1 teaspoon baking powder (if using sweet milk)
  • ½ teaspoon baking soda (if using sour milk)
  • Fat for frying

Method

  1. 1 Mix cornmeal, milk, melted butter, and salt to form a thin batter.
  2. 2 If using sweet milk, stir in baking powder; if using sour milk, add baking soda.
  3. 3 Heat fat in a frying pan over medium heat.
  4. 4 Pour batter into the pan to a thickness of about ½ inch.
  5. 5 Cook until browned on one side, then flip and cook the other side.
