Pan Fried Corned Beef Hash

Ingredients

  • 1 cup cooked corned beef, cut into ½-inch cubes
  • 1 ½ cups peeled and diced potatoes
  • ½ cup finely chopped onions
  • 1 cup boiling water
  • 3 tablespoons shortening
  • Salt and pepper to taste
  • Finely chopped parsley for garnish

Method

  1. 1 Place the cubed corned beef, diced potatoes, chopped onions, and boiling water in a saucepan.
  2. 2 Cover closely and steam until the meat and potatoes are tender and the water has evaporated. Season with salt and pepper.
  3. 3 Melt shortening in an iron frying pan over medium-high heat. Add the hash mixture, forming it into an omelet shape in half the pan.
  4. 4 Brown the hash on one side, then turn it carefully with a cake turner to brown the other side while maintaining the shape.
  5. 5 Slide onto a hot platter and garnish with finely chopped parsley.
