Pan Fried Corned Beef Hash
Ingredients
- 1 cup cooked corned beef, cut into ½-inch cubes
- 1 ½ cups peeled and diced potatoes
- ½ cup finely chopped onions
- 1 cup boiling water
- 3 tablespoons shortening
- Salt and pepper to taste
- Finely chopped parsley for garnish
Method
- 1 Place the cubed corned beef, diced potatoes, chopped onions, and boiling water in a saucepan.
- 2 Cover closely and steam until the meat and potatoes are tender and the water has evaporated. Season with salt and pepper.
- 3 Melt shortening in an iron frying pan over medium-high heat. Add the hash mixture, forming it into an omelet shape in half the pan.
- 4 Brown the hash on one side, then turn it carefully with a cake turner to brown the other side while maintaining the shape.
- 5 Slide onto a hot platter and garnish with finely chopped parsley.
