Pan-Fried Corned Beef And Potato Hash
Ingredients
- 2 cups cooked corned beef, chopped
- 2 cups cold boiled potatoes, chopped
- 1 tbsp butter
- 2 tbsp milk or cream
- Salt and pepper to taste
- Parsley sprig for garnish
Method
- 1 Remove skin and gristle from the corned beef and chop the meat. Discard most of the fat if the meat is very fatty.
- 2 Combine the chopped meat with an equal quantity of cold, chopped boiled potatoes. Season with salt and pepper.
- 3 Melt butter in a frying pan over medium heat. Add the meat and potato mixture, moisten with milk or cream, and stir until well mixed.
- 4 Spread the mixture evenly in the pan. Cook slowly until the bottom browns, then turn and fold onto a hot platter.
- 5 Garnish with a sprig of parsley in the center and serve immediately.
