Pan-Fried Corned Beef And Potato Hash

Ingredients

  • 2 cups cooked corned beef, chopped
  • 2 cups cold boiled potatoes, chopped
  • 1 tbsp butter
  • 2 tbsp milk or cream
  • Salt and pepper to taste
  • Parsley sprig for garnish

Method

  1. 1 Remove skin and gristle from the corned beef and chop the meat. Discard most of the fat if the meat is very fatty.
  2. 2 Combine the chopped meat with an equal quantity of cold, chopped boiled potatoes. Season with salt and pepper.
  3. 3 Melt butter in a frying pan over medium heat. Add the meat and potato mixture, moisten with milk or cream, and stir until well mixed.
  4. 4 Spread the mixture evenly in the pan. Cook slowly until the bottom browns, then turn and fold onto a hot platter.
  5. 5 Garnish with a sprig of parsley in the center and serve immediately.
