Pan Fried Chicken With Pan Gravy

Ingredients

  • 1 whole chicken, cleaned and disjointed
  • 2 tbsp butter
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 1 cup chicken stock
  • 1 tbsp flour
  • fresh parsley for garnish

Method

  1. 1 Heat butter and olive oil in an iron kettle. Fry chicken pieces until browned.
  2. 2 Season with salt and pepper. Add 1 cup stock, cover, and cook slowly until done, adding more stock if needed.
  3. 3 Dredge with flour and stir into the gravy until thickened.
  4. 4 Remove chicken, strain gravy over it, garnish with parsley, and serve.
