Pan Fried Chicken With Pan Gravy
Ingredients
- 1 whole chicken, cleaned and disjointed
- 2 tbsp butter
- 2 tbsp olive oil
- salt and pepper to taste
- 1 cup chicken stock
- 1 tbsp flour
- fresh parsley for garnish
Method
- 1 Heat butter and olive oil in an iron kettle. Fry chicken pieces until browned.
- 2 Season with salt and pepper. Add 1 cup stock, cover, and cook slowly until done, adding more stock if needed.
- 3 Dredge with flour and stir into the gravy until thickened.
- 4 Remove chicken, strain gravy over it, garnish with parsley, and serve.
