Pan Fried Chicken With Gravy
Ingredients
- 1 chicken, cut into pieces (2 second joints, 2 drumsticks, 2 wings, 2 breast pieces, 4 backbone pieces)
- Salt and pepper
- Flour for dredging
- 2 tablespoons bacon drippings or butter
- 1 tablespoon flour
- 1 cup cold milk
Method
- 1 Singe, wash, and clean the chicken. Cut into pieces: two second joints, two drumsticks, two wings, breast cut into two pieces, and backbone cut into four pieces.
- 2 Wipe pieces with cheesecloth. Season with salt and pepper, then dredge in flour.
- 3 Heat bacon drippings or butter in a frying pan. Brown the chicken quickly on all sides.
- 4 Add a little water, cover, reduce heat, and cook slowly until tender. Remove chicken from pan.
- 5 Mix 1 tablespoon flour with the fat in the pan. Add 1 cup cold milk and boil until thickened into a rich cream-colored gravy.
