Pan-Fried Calf's Liver With Onion Gravy
Ingredients
- 1 calf's liver, outer skin removed
- Salted water for boiling
- 1 onion, cut up
- 2 tbsp flour
- 1/2 large spoonful vinegar
- Butter or fat for frying
Method
- 1 Remove outer skin from liver and cut into very thin slices.
- 2 Boil liver slices in salted water for about 5 minutes until tender. Remove and keep warm.
- 3 In the same pan, fry the cut-up onion until brown.
- 4 Pour in the liquor used to boil the liver and thicken with flour.
- 5 Brown the gravy if necessary, then stir in the vinegar just before serving.
