Pan-Fried Calf's Liver With Onion Gravy

Ingredients

  • 1 calf's liver, outer skin removed
  • Salted water for boiling
  • 1 onion, cut up
  • 2 tbsp flour
  • 1/2 large spoonful vinegar
  • Butter or fat for frying

Method

  1. 1 Remove outer skin from liver and cut into very thin slices.
  2. 2 Boil liver slices in salted water for about 5 minutes until tender. Remove and keep warm.
  3. 3 In the same pan, fry the cut-up onion until brown.
  4. 4 Pour in the liquor used to boil the liver and thicken with flour.
  5. 5 Brown the gravy if necessary, then stir in the vinegar just before serving.
