  • 1 lb lean beef
  • Salt and pepper to taste
  • 1 tbsp grated cheese
  • Breadcrumbs
  • Butter
  • Tomato sauce

Method

  1. 1 Clean the beef, removing skins and tendons. Chop and grind the meat finely.
  2. 2 Season with salt, pepper, and grated cheese. Mix well.
  3. 3 Form the meat into a ball, coat with breadcrumbs, and flatten into a sheet about 1/4-inch thick using a rolling pin or hands.
  4. 4 Cut the sheet into squares roughly the size of a palm.
  5. 5 Pan-fry the cutlets in butter until browned on both sides.
  6. 6 Pour tomato sauce over the cutlets and serve immediately.
