  • 1 pint oyster liquor
  • Toast slices
  • 2 teaspoons flour
  • 1/2 cup butter
  • Lemons for serving

Method

  1. 1 Remove oysters from liquor, ensuring they are free of grit and shell.
  2. 2 Scald the oyster liquor until boiling, then add oysters and cook for 2-3 minutes.
  3. 3 Strain the liquor and place cooked oysters on pieces of toast.
  4. 4 Blend flour and butter, moistening with some oyster liquor, then stir into the hot remaining liquor.
  5. 5 Strain the sauce over the oysters and serve hot with lemon wedges.
