Oysters Rockefeller
Ingredients
- 1 pint oysters
- 1 pint oyster liquor
- Toast slices
- 2 teaspoons flour
- 1/2 cup butter
- Lemons for serving
Method
- 1 Remove oysters from liquor, ensuring they are free of grit and shell.
- 2 Scald the oyster liquor until boiling, then add oysters and cook for 2-3 minutes.
- 3 Strain the liquor and place cooked oysters on pieces of toast.
- 4 Blend flour and butter, moistening with some oyster liquor, then stir into the hot remaining liquor.
- 5 Strain the sauce over the oysters and serve hot with lemon wedges.
