Oyster Stuffed French Rolls

Ingredients

  • small French rolls
  • clarified butter
  • breadcrumbs
  • oysters, bearded and halved
  • oyster liquor
  • white wine
  • gravy
  • grated lemon peel
  • powdered mace
  • pepper
  • salt
  • butter

Method

  1. 1 Cut off the tops of the French rolls and remove the crumb.
  2. 2 Fry the hollowed rolls in clarified butter until brown and crisp.
  3. 3 Fry breadcrumbs separately until crisp and set aside.
  4. 4 Stew oysters in their liquor with white wine, gravy, lemon peel, mace, pepper, and salt.
  5. 5 Stir in a bit of butter, fill the fried rolls with the oyster mixture, and serve with the fried breadcrumbs.
