Oyster Stuffed French Rolls
Ingredients
- small French rolls
- clarified butter
- breadcrumbs
- oysters, bearded and halved
- oyster liquor
- white wine
- gravy
- grated lemon peel
- powdered mace
- pepper
- salt
- butter
Method
- 1 Cut off the tops of the French rolls and remove the crumb.
- 2 Fry the hollowed rolls in clarified butter until brown and crisp.
- 3 Fry breadcrumbs separately until crisp and set aside.
- 4 Stew oysters in their liquor with white wine, gravy, lemon peel, mace, pepper, and salt.
- 5 Stir in a bit of butter, fill the fried rolls with the oyster mixture, and serve with the fried breadcrumbs.
