Oyster Sauce Steak

Ingredients

  • 1 pint small oysters
  • 3 tablespoons butter
  • 2 lbs round steak
  • 1 tablespoon flour
  • 1 tablespoon lemon juice
  • salt and pepper to taste

Method

  1. 1 Wash oysters in a little water, drain into a saucepan, and heat the water until it boils. Skim and set aside.
  2. 2 Melt butter in a frying pan over medium-high heat. Add steak and cook for 10 minutes, then remove from pan.
  3. 3 Sift flour into the remaining butter and stir until browned. Add the reserved oyster liquor and boil for 1 minute.
  4. 4 Season the sauce, return the steak to the pan, cover, and simmer for 30 minutes.
  5. 5 Add oysters and lemon juice. Boil for 1 minute and serve immediately.
