Oyster Sauce Steak
Ingredients
- 1 pint small oysters
- 3 tablespoons butter
- 2 lbs round steak
- 1 tablespoon flour
- 1 tablespoon lemon juice
- salt and pepper to taste
Method
- 1 Wash oysters in a little water, drain into a saucepan, and heat the water until it boils. Skim and set aside.
- 2 Melt butter in a frying pan over medium-high heat. Add steak and cook for 10 minutes, then remove from pan.
- 3 Sift flour into the remaining butter and stir until browned. Add the reserved oyster liquor and boil for 1 minute.
- 4 Season the sauce, return the steak to the pan, cover, and simmer for 30 minutes.
- 5 Add oysters and lemon juice. Boil for 1 minute and serve immediately.
