Oyster Gumbo Soup
Ingredients
- 2 medium onions, minced
- 1 cup hot water
- 1 cup oyster liquid
- 1 cup milk
- 1/2 cup flour
- 1/2 cup milk
- 25 oysters
- 1 tbsp file powder (gumbo powder)
- 1 oz butter
- 3 tbsp finely chopped parsley
Method
- 1 Mince onions and place in a saucepan.
- 2 Add 1 cup hot water, 1 cup oyster liquid, and 1 cup milk.
- 3 Bring to a boil and cook for 5 minutes.
- 4 Stir in flour dissolved in 1/2 cup milk until boiling.
- 5 Add oysters, file powder, and butter; cook 5 minutes.
- 6 Pour into a tureen and garnish with parsley.
