Oyster Fricassee With Fried Bread
Ingredients
- 1 quart oysters
- 4 tablespoons butter
- 2 egg yolks
- ½ teaspoon chopped parsley
- 1 tablespoon flour
- Salt, pepper, and cayenne to taste
- Fried bread for serving
Method
- 1 Melt butter in a pan over medium heat.
- 2 Stir in parsley, flour, salt, pepper, and cayenne; cook briefly.
- 3 Add well-drained oysters and cook until edges curl.
- 4 Remove from heat and stir in beaten egg yolks.
- 5 Serve immediately on warmed plates with fried bread.
