Oyster And Okra Gumbo
Ingredients
- 1 pint oysters
- 4 cups fish stock
- ¼ cup butter
- 1 tablespoon chopped onion
- ½ can okra
- 1/3 can tomatoes
- Salt and pepper to taste
Method
- 1 Clean, pick over, and parboil the oysters; drain them and reserve the oyster liquor.
- 2 Add the reserved oyster liquor to the fish stock and set aside.
- 3 Melt half of the butter in a pot and cook the chopped onion for five minutes.
- 4 Add the fish stock mixture, okra, and drained tomatoes to the pot.
- 5 Add the oysters and the remaining butter; simmer until heated through.
- 6 Season with salt and pepper before serving.
