Oyster And Okra Gumbo

Ingredients

  • 1 pint oysters
  • 4 cups fish stock
  • ¼ cup butter
  • 1 tablespoon chopped onion
  • ½ can okra
  • 1/3 can tomatoes
  • Salt and pepper to taste

Method

  1. 1 Clean, pick over, and parboil the oysters; drain them and reserve the oyster liquor.
  2. 2 Add the reserved oyster liquor to the fish stock and set aside.
  3. 3 Melt half of the butter in a pot and cook the chopped onion for five minutes.
  4. 4 Add the fish stock mixture, okra, and drained tomatoes to the pot.
  5. 5 Add the oysters and the remaining butter; simmer until heated through.
  6. 6 Season with salt and pepper before serving.
