Oyster And Egg Puff Pastry Pies
Ingredients
- puff pastry
- oysters, chopped
- hard-boiled eggs, chopped
- fresh parsley, chopped
- lemon peel, grated
- salt and pepper
- pounded mace
- cream
- oyster liquor
- egg yolk
Method
- 1 Roll out puff pastry and cut into rounds. Chop oysters and mix with an equal amount of chopped hard-boiled eggs, parsley, lemon peel, salt, pepper, and mace.
- 2 Moisten the mixture with cream and oyster liquor. Place a spoonful on each pastry round, fold over, moisten edges, and press to seal.
- 3 Brush with egg yolk and fry for 15 minutes until golden and cooked through.
