Ingredients

  • puff pastry
  • oysters, chopped
  • hard-boiled eggs, chopped
  • fresh parsley, chopped
  • lemon peel, grated
  • salt and pepper
  • pounded mace
  • cream
  • oyster liquor
  • egg yolk

Method

  1. 1 Roll out puff pastry and cut into rounds. Chop oysters and mix with an equal amount of chopped hard-boiled eggs, parsley, lemon peel, salt, pepper, and mace.
  2. 2 Moisten the mixture with cream and oyster liquor. Place a spoonful on each pastry round, fold over, moisten edges, and press to seal.
  3. 3 Brush with egg yolk and fry for 15 minutes until golden and cooked through.
