Oyster And Biscuit Stew

Ingredients

  • 1 quart oysters in their own liquor
  • 1 tablespoon butter
  • 2 tablespoons flour
  • cold milk
  • 2 small cups boiling water
  • salt and pepper
  • light biscuit dough

Method

  1. 1 Scald oysters in their liquor, then remove and keep hot.
  2. 2 Whisk butter and flour, then moisten with cold milk.
  3. 3 Add boiling water to oyster liquor, season with salt and pepper.
  4. 4 Stir flour mixture into the oyster liquor and cook until thickened.
  5. 5 Cut biscuit dough into small balls and drop into the boiling sauce.
  6. 6 Cover and cook until dough is done.
  7. 7 Place oysters on a hot dish and pour biscuit balls and sauce over them.
