Overnight Yeast Cinnamon Coffee Cake
Ingredients
- 1 cup milk
- 1 heaping tablespoon butter
- 2 heaping tablespoons sugar
- 1/4 yeast cake
- 1 tablespoon warm water
- pinch of salt
- sifted flour
- softened butter
- sugar
- cinnamon
Method
- 1 Scald and cool 1 cup milk to lukewarm. Add 1 heaping tbsp butter, 2 heaping tbsp sugar, 1/4 yeast cake dissolved in 1 tbsp warm water, and a pinch of salt. Add enough sifted flour to make a soft dough.
- 2 Let the dough rise overnight.
- 3 Roll out the dough and spread it in a flat buttered tin. Rub with softened butter, then sprinkle with sugar and cinnamon.
- 4 Bake in a moderate oven (350°F) for about 30 minutes. Cut into squares and serve hot.
