Overnight Yeast Cinnamon Coffee Cake

Ingredients

  • 1 cup milk
  • 1 heaping tablespoon butter
  • 2 heaping tablespoons sugar
  • 1/4 yeast cake
  • 1 tablespoon warm water
  • pinch of salt
  • sifted flour
  • softened butter
  • sugar
  • cinnamon

Method

  1. 1 Scald and cool 1 cup milk to lukewarm. Add 1 heaping tbsp butter, 2 heaping tbsp sugar, 1/4 yeast cake dissolved in 1 tbsp warm water, and a pinch of salt. Add enough sifted flour to make a soft dough.
  2. 2 Let the dough rise overnight.
  3. 3 Roll out the dough and spread it in a flat buttered tin. Rub with softened butter, then sprinkle with sugar and cinnamon.
  4. 4 Bake in a moderate oven (350°F) for about 30 minutes. Cut into squares and serve hot.
