Overnight Sponge Bread With Egg Buns
Ingredients
- 1 cake yeast
- 1 quart water
- 6 pints flour
- 2 teaspoons salt
- 1 pint water
- 3 pints flour
- 2 teaspoons butter
- 1 egg
Method
- 1 Soak yeast in 1 quart water, then add 6 pints flour and 2 teaspoons salt.
- 2 Let mixture stand overnight in a warm place.
- 3 In the morning, add 1 pint water and 3 pints flour to the mixture.
- 4 Let stand for one hour, then knead well and shape into loaves.
- 5 Let loaves rise for another hour or until well risen.
- 6 For buns, take part of the sponge, add 2 teaspoons butter and 1 egg.
