Overnight Pancakes With Stiff Beaten Egg

Ingredients

  • 1 cup milk, scalded and cooled
  • 1/4 cake yeast
  • 1 heaping tbsp butter, melted
  • 1 tsp sugar
  • 1 pinch salt
  • 1 cup sifted flour
  • 1 egg, beaten

Method

  1. 1 Dissolve yeast in cooled scalded milk. Stir in melted butter, sugar, salt, and flour until smooth.
  2. 2 Let the batter rise overnight in a covered container.
  3. 3 In the morning, beat the egg separately until stiff, then fold into the batter.
  4. 4 Beat the batter until smooth and thin, then fry on a griddle as usual.
