Overnight Milk Yeast Rolls

Ingredients

  • 2 cups flour
  • 3 cups boiled milk
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • ½ cup butter
  • 2 egg whites
  • ½ cake yeast

Method

  1. 1 Boil milk, then dissolve sugar and salt in it. Add butter and stir until melted.
  2. 2 Let mixture cool to tepid. Stir in beaten egg whites and yeast dissolved in 2 tablespoons water.
  3. 3 Add flour and knead dough for 20-30 minutes. Cover and let rise overnight in a warm place.
  4. 4 For breakfast: Shape rolls, let rise until doubled, and bake for 30 minutes.
  5. 5 For luncheon: Punch down dough in the morning. Refrigerate until 1.5 hours before serving, then shape, rise, and bake.
  6. 6 For tea: Start dough in the morning. Allow 4.5 hours total rising time.
