Overnight Milk Bread
Ingredients
- 1 quartern flour (approx. 32 oz or 2 lbs)
- 2 teaspoons salt
- 4 tablespoons yeast
- 1 pint milk
- 0.5 pint warm milk
Method
- 1 Combine flour and salt in a large basin. Make a well in the center.
- 2 Mix yeast with 1 pint lukewarm milk to form a thin batter. Pour into the flour well, sprinkle with a little flour, and cover. Let stand overnight.
- 3 Add 0.5 pint warm milk to the starter. Knead for 10 minutes, then let rise in a warm place for 1.5 hours.
- 4 Knead again, shape into loaves, and bake at 350°F for 1.5 to 2 hours depending on size.
